VEGGIE COUSCOUS

Ingredients
2 small onions
3 garlic cloves
1 small eggplant or half of a bigger one
2 tomatoes
a piece of cucumber
200g couscous
good olive oil
fresh herbs, such as mint, parsley, oregano, chives
salt & pepper

Chop the garlic, onions and eggplant and cook on a frying pan until golden brown. Cook the couscous in a separate saucepan. Chop tomatoes, cucumber, all the herbs and mix together all the ingredients. Add salt & pepper to your taste. Couscous can be served as hot or cold!

This is a super simple recipe and actually any vegetables you have in the fridge or in your garden work for this dish! Try adding different kinds of onions, leeks, bell peppers, zucchini or beans. The couscous can be served on its own or as a side dish to some falafels, lamb or chicken. And tsatsiki sauce goes very nicely with this one! Don’t forget to serve some delicious, fruity and fresh red wine with this, such as Rouge de Carsin!
