Balsamique de Carsin

 

Balsamique de Carsin is a barrel-aged balsamic vinegar made by Chateau Carsin. We pick the Sémillon grapes by hand for this product and press them directly. The pressed juice will settle in a cold temperature and little by little we "concentrate" the juice by heating it in a special tank and we reduce it to a third of the original volume. 

After reduction, the balsamic is aged in old oak barrels for about 2 years and we add 1% of organic red wine vinegar to it before it's bottled, labeled and waxed by hand.

Balsamique de Carsin makes a great salad dressing and goes well with quiches too. Try also making a rich red wine sauce with balsamique or using it with desserts! Our personal favourite is marinate fresh strawberries with balsamique and serve just like that.
